Apple Pie Flavoured Overnight Oat and Chia Pudding - Renuka George

This recipe is one of my favourites! If I’m honest, it was never meant to be apple-pie flavoured - I just wanted to use up some green apples that weren’t being eaten and apples go well with cinnamon. So I added that to my regular (less interesting) chia pudding, but I just recently made this for some friends and they all said it tasted like apple pie!! So there you have it - apple pie without the butter and the gluten or any fuss! How fun!!

INGREDIENTS

  •  2 cups old fashioned rolled oats

  •  2 tablespoons chia seeds

  •  2½ cups unsweetened almond milk

  •  3 tablespoons pure maple syrup

  •  1/2 cup freshly grated green apple 

  • 1/2 teaspoon cinnamon 

  •  top with almonds, pecans or coconut flakes for crunch, optional

INSTRUCTIONS

  1. Place the oats, chia seeds, almond milk, cinnamon and maple syrup in a large bowl. Stir together until combined. Cover with plastic wrap and store in the fridge overnight.

  2. In the morning, stir in grated green apple. if desired, and divide into jars or bowls.

  3. Top with nuts, seeds or coconut flakes serve and enjoy!

NOTES

  • The oats keep for up to 5 days in the refrigerator. Just add crunchy toppings right before serving if using.

  • Heat for 40 seconds in the microwave if you'd like them warmer.
