Jem’s Sweet ‘n Spicy Scrambled Eggs - Jemima Varughese
When we get a Saturday morning free, I usually make this for my family - a sweet ‘n spicy twist on scrambled eggs…
Ingredients:
Makes for 4
6-8 organic eggs
½ cup full cream milk
A slice of unsalted butter
250g pack of bacon pieces or bacon cubes
Maple syrup (enough to saturate bacon, you can use the sugar free one for a healthy option)
½ cup of cheddar cheese (sometimes I add feta as well, but my sons are not a fan of this!)
1 tsp chilli salt (if your kids like spice!)
Method
Saturate bacon in maple syrup and fry (I use an air fryer for minimal mess and time).
Beat eggs with a whisk and pour in milk, cheese and chilli salt.
On medium heat melt the slice of butter and then pour in the eggs mixture and mostly cooked bacon (my kids love crispy bacon).
Stir with a wooden spoon until mixture starts to take form.
When mixture is looking fluffy, turn heat off.
Serve with hot toast and love!
