Christmas Ham Recipe
Christmas is here! There are so many things to celebrate and look forward to during the Christmas season and this year, I decided to make an 8.5kg maple-baked ham to share it with our team in Kuala Lumpur. It was demolished in 30 minutes! If you are thinking of making a ham this Christmas, here is the recipe based on 5kgs of ham. Enjoy!
INGREDIENTS
5kg of ham on the bone - The bone makes it even more tasty! Jar of cloves (enough to cover whole ham)
250g packed brown sugar
2 tsp mustard powder
1/4 verjuice juice
1/2 cup maple syrup (I do 1 cup as I love maple - but conservatively, 1/2 cup will do)
METHOD
Heat up the oven to 180C.
Remove skin, but leave the fat on.
Score the fat in a diamond pattern.
Put 1 Clove into each diamond cross.
With a roasting pan, fill it up with water until it reaches about 2 inches.
Place the ham on a rack, and then in the pan.
Combine maple, mustard, verjuice, sugar in a sauce pan over low heat until melted together.
Using 1/2 of the combined sauce, brush the ham generously then put it in the oven for 45 minutes.
After 20 minutes, take the ham out and brush again with 1/4 amount of the sauce, then place it back in the oven.
After 40 minutes, remove the ham from the oven and brush it over with the rest of the sauce. Then, serve hot with hot crust sourdough.
To store, get a wet towel and tightly wrap the ham in it. Then put it in a cloth bag to be kept in the fridge. This will keep it moist for days! Enjoy!
