Red Velvet Ice Cream Cookies

INGREDIENTS
1 package red velvet cake mix
1 cup white chocolate chips (175g)
½ cup oil (120ml)
2 eggs
Icing sugar
METHOD
Combine cake mix, 2/3 cup of chocolate chips, oil, and eggs in a mixing bowl — make sure to reserve 1/3 cup of the chocolate chips!
Using an ice cream scoop or your hand, form golf ball-sized balls of cookie dough and transfer to a parchment paper-lined baking sheet.
Use 1/3 cup of chocolate chips and place on top of each cookie.
Bake at 350ºF (180ºC) for 10-12 minutes.
Once baked and cooled, put 1 scoop of ice cream between the red velvet cookies and sandwich it.
Lightly dust with icing sugar to finish!
