Delicious Homemade Spaghetti Bolognese - Erika Gallaspen
This meal is perfect for a family or when hosting a dinner, it’s delicious and fun to make!
(serves 6 people)
Pasta Dough
INGREDIENTS
2 tsp of salt 350g
(2 1/2 cups) plain flour or (Italian “00” flour if available)
3 whole eggs at room temperature
6 egg yolks at room temperature
flour, extra to dust
METHOD
1. Mix salt and flour, then sift.
2. Mix whole eggs and egg yolks.
3. In a large bowl gradually mix egg mixture into dry ingredients (salt & flour) bringing the ingredients together into a firm dough. If the dough feels too dry, add a few drops of water; if the dough feels too wet, add a little more flour.
4. Knead until smooth for 7 to 10 minutes.
5. Once smooth, cover the dough in cling wrap, let it rest, set aside in the fridge for
30 minutes.
6. Divide the dough into 6 equal parts.
7. In making spaghetti, pasta dough can be done 2 ways (do as desired):
Option 1: Roll the dough flat using a wooden rolling pin and cut flat sheets with a knife into 2 mm strings.
Option 2: Flatten the dough using a pasta maker, fold it in half after the first time it is run through the machine to achieve smooth even sides. Pass the pasta through the machine twice for each number of width settings from 0 to 5. Total of passing through the machine 10 times. Once desired thickness is achieved, roll pasta to the spaghetti attachment of the pasta maker.
8. Leave spaghetti air dried for 15 minutes.
9. Cook for 5 minutes in boiling water, drain then set aside.
Bolognese Sauce
INGREDIENT
2 tbsp salted butter
1 small onion, diced
2 cloves garlic, chopped
1 carrot, diced
2 celery stalk, diced
4 strips of bacon, diced
1 tsp salt
500g beef mince
500g pork mince
2 dried bay leaves
2 tsp sugar
800g or 2 jars of tomato sauce
1 tsp parsley, chopped Parmesan cheese, to serve
METHOD
1. Heat butter in a frying pan over medium heat.
2. Add onion, garlic, carrot, celery, bacon and salt. Cook until vegetables are caramelised.
3. Add beef and pork, constantly stirring to even out the colour of the mince.
4. Add bay leaves, sugar & tomato sauce, bring to boil then simmer until desired
thickness of the sauce is achieved.
5. Take sauce off the heat, serve with fresh pasta, Parmesan cheese and garnish with chopped parsley.
