Delicious Vegan Brownies - Sekbago Kabamba

One thing I absolutely love about being in the kitchen apart from making smoothies while singing at the top of my voice, or listening to a good sermon is creating nutritious, healthy baked goods like these delicious brownies.

Being vegan, to me is all about being healthy and eating as clean as possible, consuming whole, unprocessed foods as much as you can. Another thing I love about these brownies is you can add and substitute any of the ingredients depending on what you want. For example you can add  flaxseed meal for a protein kick. Simply use 2 tbsp of flaxseed meal, mix with 2 tbsp of water and add to the wet ingredients then mix it in as you follow through with the rest of the recipe. 

This recipe yields 16 brownies but because I love generous portions, I cut out big chunky pieces so I get around 10. So I definitely feel good about myself after having just one!

INGREDIENTS

  • 2 cups all-purpose flour

  • 2 cups brown sugar

  • ¾ cup unsweetened cocoa powder

  • 1 teaspoon baking powder

  • 1 teaspoon salt

  • 1 cup water

  • 1 cup soy milk (or any other non-dairy milk)

  • ½ cup vegetable oil (I love using canola oil, didn’t have it but it works)

  • 1 teaspoon vanilla extract

  • Dark chocolate chips (optional)

  • Dark chocolate melted (optional)

  • Icing sugar (optional)

METHOD

  1. Preheat oven to 160 degrees 

  2. In a large bowl stir together the flour, sugar, cocoa powder, baking powder and salt.

  3. Pour in water, vegetable oil, soy milk and vanilla until smooth

  4. Grease a brownie pan and place parchment paper on it

  5. Pour in mixture and distribute evenly across the pan

  6. Add on top the chocolate chips and pop into the oven

  7. Bake for 25- 30 minutes until the top is no longer shiny. Let cool for at least 10 minutes 

  8. For an extra chocolatey brownies, melt some dark chocolate over boiling water, add icing sugar and water to the melted chocolate until smooth then quickly pour it over the brownies. Dust with some icing sugar then cut into squares.
